High-Protein High-Fibre soup series: Carrot & Ginger 

 

Soup season is so nearly here, and this one is more than just warm and cozy. This carrot & ginger soup is loaded with plant-based protein, gut-feeding fibre, and anti-inflammatory phytonutrients like beta carotene to keep you full and feeling amazing!

Here’s what I used:
🧅 150g onion
🥕 380g carrots
🌱 150g red lentils
🫚1 tbumb of fresh ginger
🌶️Pinch chili flakes
💧 ~6 cups water (adjust for your preferred thickness)

Simply sauté the onion in a splash of water, add everything else and simmer until everything is soft, then blend until smooth then salt and pepper to your taste!
