โœจ One-pot creamy lentil curry!

gut-loving, high in fibre, and packed with plants to keep you full and thriving!

Nothing difficult, just real food that works.

Hereโ€™s what I used:
๐Ÿ’š1 cup puy lentils
๐Ÿ’š1 small onion, chopped
๐Ÿ’š1 thumb fresh ginger, minced
๐Ÿ’š2 tbsp curry powder
๐Ÿ’š1 head broccoli, chopped
๐Ÿ’šยฝ cup frozen peas
๐Ÿ’šA big bunch of kale (stalks removed)
๐Ÿ’š1 loaded tbsp coconut cream
๐Ÿ’šVeggie stock to cook lentils

Method:

1๏ธโƒฃ Sautรฉ onion, ginger & spices in a little veggie stock before adding the lentils + enough water to cover the lentils by about 1inch. Simmer until soft.

2๏ธโƒฃ Toss in broccoli, peas, kale & coconut cream. Cook for a few more mins until the veg is tender but still vibrant (my broccoli was a lil overcooked)
And thatโ€™s it!! Done โœ…
