โจ One-pot creamy lentil curry!
gut-loving, high in fibre, and packed with plants to keep you full and thriving!
Nothing difficult, just real food that works.
Hereโs what I used:
๐1 cup puy lentils
๐1 small onion, chopped
๐1 thumb fresh ginger, minced
๐2 tbsp curry powder
๐1 head broccoli, chopped
๐ยฝ cup frozen peas
๐A big bunch of kale (stalks removed)
๐1 loaded tbsp coconut cream
๐Veggie stock to cook lentils
Method:
1๏ธโฃ Sautรฉ onion, ginger & spices in a little veggie stock before adding the lentils + enough water to cover the lentils by about 1inch. Simmer until soft.
2๏ธโฃ Toss in broccoli, peas, kale & coconut cream. Cook for a few more mins until the veg is tender but still vibrant (my broccoli was a lil overcooked)
And thatโs it!! Done โ
