Leftover roasties this Boxing Day?! Here’s a quick potato & lentil dish to use them up!
Cook up the lentils as below and add to the leftover roast potatoes! Otherwise these are yum on top of avocado toast or a big baked potato!

Winter Spiced Lentils
Time: 15 minutes
Serves: 2
Ingredients
- 1 tin green lentils drained and rinsed
- 1 red onion chopped
- 3 spring onions
- 3 cloves garlic minced
- 1 tsp mustard
- Salt and pepper
- 1/2 a veggie stock cube
- 1 tsp each; Dried Rosemary, Dill & sage
Method
- Sauté onions & garlic until translucent.
- Add in all the herbs and spices & stock cube followed by the lentils.
- Cook for a few minutes until the lentils are hot.
- Add in chopped spring onions
- Serve & ENJOY
