Leftover roasties this Boxing Day?! Here’s a quick potato & lentil dish to use them up!
Cook up the lentils as below and add to the leftover roast potatoes! Otherwise these are yum on top of avocado toast or a big baked potato!

Winter Spiced Lentils 

Time: 15 minutes 

Serves: 2

Ingredients 

  • 1 tin green lentils drained and rinsed
  • 1 red onion chopped
  • 3 spring onions
  • 3 cloves garlic minced
  • 1 tsp mustard
  • Salt and pepper
  • 1/2 a veggie stock cube
  • 1 tsp each; Dried Rosemary, Dill & sage

Method

  1. Sauté onions & garlic until translucent.
  2. Add in all the herbs and spices & stock cube followed by the lentils.
  3. Cook for a few minutes until the lentils are hot.
  4. Add in chopped spring onions
  5. Serve & ENJOY
